Gustavo Caixeta Ribeiro is the son of a coffee farmer and has been actively involved in the family farms since 2011, when he graduated in Agronomy and began following in the footsteps of his father, Lázaro Ribeiro. Both Gustavo and his father are passionate about the specialty coffee industry, bringing exceptional beans from their farm to coffee lovers worldwide.

This coffee comes from Gustavo's Congonhas farm in Brazil, where he implements innovative approaches to coffee farming. Despite facing challenges of frost and drought in the same year, his dedication to quality remains uncompromised. What makes Gustavo's approach special is his focus on post-harvest processes while respecting the intrinsic characteristics of each coffee variety. He practices regenerative agriculture, operates a nursery in partnership with a research institute to study new varietals, and conducts experiments with microlots—including trials with different native trees for shade-grown coffee.

This particular lot from Congonhas features the Paraíso variety, prepared using the natural process on patios. The drying process began with medium-sized rows that were turned daily until the beans were half-dried. On the 11th day, when the moisture content reached 16%, the beans were arranged into higher rows to continue drying slowly. Once the moisture level reached 11.5%, the beans were stored in a wooden barn to ensure uniform drying before processing. This meticulous attention to detail in the drying process helps develop the coffee's distinctive flavor profile of milk chocolate and nuts with delightful hits of apricot.

This coffee stood out most from all the coffees we cupped from Bossa Coffee. It's a classic high-quality Brazil that delivers a thoroughly satisfying cup—smooth, balanced, and exceptionally tasty.

This coffee is sourced through Bossa Coffee, a new importer we've started working with that specialises in Brazilian specialty coffee.

This coffee works well black and also with milk.
