This is a new decaf for us and comes from Ensambles, an importer we've started working with for our Mexican coffees.
This coffee is a blend that brings together the production of the Capitán Luis A. Vidal cooperative, located in Jaltenango, and the Majomut Organic organization from the Highlands of Chiapas. Its origin combines two emblematic territories of the state: the hospitable mountains surrounding the El Triunfo Biosphere Reserve in the Sierra Madre del Sur, and the landscapes that characterize the Highlands of Chiapas.
Grown in systems free of agrochemicals and following the principles of organic agriculture, this coffee reflects the commitment of the producing communities to environmental conservation and the responsible management of soil and ecosystems.
The coffee undergoes the Mountain Water Decaf process, developed by Descamex in Córdoba, Veracruz. This natural method uses pure water from Pico de Orizaba to remove up to 99% of caffeine from green coffee beans without chemicals, while preserving the coffee's flavor and aroma.
