San Sebastián is a coffee comes from smallholder growers in Inzá municipality, which is part of the Tierradentro region located on the western side of Cauca.

This region is home to the indigenous Paeces community, who make up around 80% of the local population. Farms here are small—typically between 0.5 to 1.5 hectares.

We chose this coffee in part because of how popular the washed Villamaria has become over the years, and how its producer group has grown in size. While Villamaria now has over 100 contributing producers, San Sebastián comes from a much smaller group—around 30 producers in total.

We picked this coffee to highlight the contrast between two washed Colombian coffees that might seem similar yet are quite different in taste.

This is a washed lot made up of Castillo and Caturra varieties, imported via Cofinet.

It’s a great example of a classic Colombian profile—clean, sweet, and balanced—with notes that remind us of pink apple, caramel, and nutmeg.
